- 1/2 cup vegetable oil
- 2 large eggs
- 2 cups flour
- 1/2 tsp baking powder
- 3/4 cup granulated sugar
- 1 can canned pumpkin (15 oz.)
- 2 1/2 tsp ground cinnamon
- 1 tsp baking soda
Preheat oven to 325F
Grease and flour two loaf pans
In a large bowl whisk oil and sugar until combined. Add in eggs and pumpkin puree. Mix until fully combined
Add in the flour, cinnamon, nutmeg, baking powder, baking soda, and salt
Mix everything until the batter is well combined
Evenly pour the batter into two pans
Bake for 40-60 minutes
Let the loaves cool in the pans for 10 minutes, then remove to a wire cooling rack to finish cooling
