Spinach and Potato Crustless Quiche

- 2 tbsp cooking oil
- 1 medium onion (chopped)
- 10 oz (1 packet) frozen spinach (thawed and drained)
- 1 cup shredded cheese (mozzarella, swiss, cheddar)
- 6 eggs
- ⅔ cup potato flakes
- ¾ cup milk
- 1 tsp salt
- 1 tsp ground black pepper
Preheat oven at 350F degrees. Spray pie plate with non-stick cooking spray.
Heat the oil in a large skillet on medium heat. Add chopped onion and sauté until onions begin to sweat. Stir in frozen spinach and season with salt, cook for an additional 4 minutes.
Whisk together eggs and ¾ cup of milk, and potato flakes. Add cheese to mixture and combine with onion and spinach, mix well.
Pour mixture into greased pie plate and bake at 350F degrees for 30 minutes.
Cool for 5 minutes to allow cheese to set before cutting and serving.
