Spray a mini muffin tin with cooking spray and set aside.
Stir graham cracker crumbs and melted butter in a small bowl until well combined.
Press the mixture into each mini muffin cup to form the crust. The put pan in freezer to firm up the crust while you make the filling
In a large bowl whisk together the cream cheese, Greek yogurt, honey, lemon juice, vanilla, and salt until creamy and smooth.
Remove pan from freezer and add about 1 Tbsp of filling to each cup.
Top with fresh fruit, cover pan, and put in freezer for 15-20 minutes, then serve.
