Mini Cheesecake Bites
Ingredients
- 1 cup graham crackers, crushed
- 3 tbsp unsalted butter, melted
- 8 oz package plain cream cheese
- ¼ cup plain non-fat Greek yogurt
- 1.5 tbsp honey
- ½ tbsp lemon juice
- 1 tsp vanilla extract
- pinch of salt
Instructions
- Spray a mini muffin tin with cooking spray and set aside.
- Stir graham cracker crumbs and melted butter in a small bowl until well combined.
- Press the mixture into each mini muffin cup to form the crust. The put pan in freezer to firm up the crust while you make the filling
- In a large bowl whisk together the cream cheese, Greek yogurt, honey, lemon juice, vanilla, and salt until creamy and smooth.
- Remove pan from freezer and add about 1 Tbsp of filling to each cup.
- Top with fresh fruit, cover pan, and put in freezer for 15-20 minutes, then serve.
