Mini Cheesecake Bites

Ingredients
  

  • 1 cup graham crackers, crushed
  • 3 tbsp unsalted butter, melted
  • 8 oz package plain cream cheese
  • ¼ cup plain non-fat Greek yogurt
  • 1.5 tbsp honey
  • ½ tbsp lemon juice
  • 1 tsp vanilla extract
  • pinch of salt

Instructions
 

  • Spray a mini muffin tin with cooking spray and set aside. 
  • Stir graham cracker crumbs and melted butter in a small bowl until well combined.​
  • Press the mixture into each mini muffin cup to form the crust. The put pan in freezer to firm up the crust while you make the filling​
  • In a large bowl whisk together the cream cheese, Greek yogurt, honey, lemon juice, vanilla, and salt until creamy and smooth.​
  • Remove pan from freezer and add about 1 Tbsp of filling to each cup.​
  • Top with fresh fruit, cover pan, and put in freezer for 15-20 minutes, then serve. ​
