
Black Bean Brownies
Ingredients
- 2 15 ounce can black beans
- 6 large eggs
- 6 tablespoons vegetable oil
- 1½ cups brown sugar
- 1 cup unsweetened cocoa powder
- 2 teaspoon vanilla extract
- 1 cup flour or gluten-free flour mix
- 1 teaspoon baking powder
- Pinch salt
- 1½ cups mini semi-sweet chocolate chips divided
Instructions
- Preheat the oven to 350 F. Lightly oil or coat baking pan with nonstick cooking spray and set aside.
- Place the black beans (including the liquid) in the bowl of a food processor and process until smooth and creamy.
- Add the eggs, oil, sugar, cocoa powder, vanilla, baking powder, and salt.
- As you process the ingredients, stop the machine a couple of times to scrape the sides and the bottom of the bowl with a rubber spatula.
- Slowly add the flour until blended.
- Add 1 cup of the chips and pulse a few times until the chips are incorporated. Process everything until it is smooth.
- Pour the batter into the prepared pan. Smooth the top with a rubber spatula, and sprinkle with the remaining ½ cup of the chocolate chips.
- Bake 30 to 35 minutes, or until the edges start to pull away from the sides of the pan and a toothpick inserted in the center comes out clean.
- Cool in the pan before slicing into 2-inch squares.
