Spinach and Potato Crustless Quiche
Ingredients
- 2 tbsp cooking oil
- 1 medium onion (chopped)
- 10 oz (1 packet) frozen spinach (thawed and drained)
- 1 cup shredded cheese (mozzarella, swiss, cheddar)
- 6 eggs
- ⅔ cup potato flakes
- ¾ cup milk
- 1 tsp salt
- 1 tsp ground black pepper
Instructions
- Preheat oven at 350F degrees. Spray pie plate with non-stick cooking spray.
- Heat the oil in a large skillet on medium heat. Add chopped onion and sauté until onions begin to sweat. Stir in frozen spinach and season with salt, cook for an additional 4 minutes.
- Whisk together eggs and ¾ cup of milk, and potato flakes. Add cheese to mixture and combine with onion and spinach, mix well.
- Pour mixture into greased pie plate and bake at 350F degrees for 30 minutes.
- Cool for 5 minutes to allow cheese to set before cutting and serving.
