Spinach and Potato Crustless Quiche

Ingredients
  

  • 2 tbsp cooking oil
  • 1 medium onion (chopped)
  • 10 oz (1 packet) frozen spinach (thawed and drained)
  • 1 cup shredded cheese (mozzarella, swiss, cheddar)
  • 6 eggs
  • cup potato flakes
  • ¾ cup milk
  • 1 tsp salt
  • 1 tsp ground black pepper

Instructions
 

  • Preheat oven at 350F degrees. Spray pie plate with non-stick cooking spray. 
  • Heat the oil in a large skillet on medium heat. Add chopped onion and sauté until onions begin to sweat. Stir in frozen spinach and season with salt, cook for an additional 4 minutes.
  • Whisk together eggs and ¾ cup of milk, and potato flakes. Add cheese to mixture and combine with onion and spinach, mix well. 
  • Pour mixture into greased pie plate and bake at 350F degrees for 30 minutes.  
  • Cool for 5 minutes to allow cheese to set before cutting and serving.
