Apple Bean Muffins

Ingredients
  

  • 1/2 cup sugar
  • 1/4 cup canola oil or vegetable oil
  • 1 beaten egg
  • 2 cups cooked and mashed pinto beans
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 2 cups peeled and diced apples
  • 1 tsp vanilla

Instructions
 

  • Preheat oven to 375 °F.
  • Wash hands with warm, soapy water (at least 20 seconds.)
  • In a large bowl, blend sugar and oil.
  • Add eggs and beans and mix well.
  • Stir in remaining ingredients.
  • Bake for 15-20 minutes or until a toothpick comes out clean (less if using mini muffin tin.)
  • Let cool and refrigerate leftovers.
