Apple Bean Muffins
Ingredients
- 1/2 cup sugar
- 1/4 cup canola oil or vegetable oil
- 1 beaten egg
- 2 cups cooked and mashed pinto beans
- 1 cup flour
- 1/2 tsp baking soda
- 1 1/2 tsp cinnamon
- 2 cups peeled and diced apples
- 1 tsp vanilla
Instructions
- Preheat oven to 375 °F.
- Wash hands with warm, soapy water (at least 20 seconds.)
- In a large bowl, blend sugar and oil.
- Add eggs and beans and mix well.
- Stir in remaining ingredients.
- Bake for 15-20 minutes or until a toothpick comes out clean (less if using mini muffin tin.)
- Let cool and refrigerate leftovers.
