Pumpkin Bread
Ingredients
- 1/2 cup vegetable oil
- 2 large eggs
- 2 cups flour
- 1/2 tsp baking powder
- 3/4 cup granulated sugar
- 1 can canned pumpkin (15 oz.)
- 2 1/2 tsp ground cinnamon
- 1 tsp baking soda
Instructions
- Preheat oven to 325F
- Grease and flour two loaf pans
- In a large bowl whisk oil and sugar until combined. Add in eggs and pumpkin puree. Mix until fully combined
- Add in the flour, cinnamon, nutmeg, baking powder, baking soda, and salt
- Mix everything until the batter is well combined
- Evenly pour the batter into two pans
- Bake for 40-60 minutes
- Let the loaves cool in the pans for 10 minutes, then remove to a wire cooling rack to finish cooling
