  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups flour
  • 1/2 tsp baking powder
  • 3/4 cup granulated sugar
  • 1 can canned pumpkin (15 oz.)
  • 2 1/2 tsp ground cinnamon
  • 1 tsp baking soda


  • Preheat oven to 325F 
  • Grease and flour two loaf pans
  • In a large bowl whisk oil and sugar until combined. Add in eggs and pumpkin puree. Mix until fully combined 
  • Add in the flour, cinnamon, nutmeg, baking powder, baking soda, and salt
  • Mix everything until the batter is well combined
  • Evenly pour the batter into two pans
  • Bake for 40-60 minutes 
  • Let the loaves cool in the pans for 10 minutes, then remove to a wire cooling rack to finish cooling
